Description
Grapes: 80% Corvina & Corvinone Veronese, 20% Rondinella
Yield per Hectare: 90 q/ha
Training System: Veronese Pergola, simple or double depending on the area
Production Area: Hills of Marano di Valpolicella (classic and historic zone)
Soil: Mainly Eocene-calcareous
Vinification: Produced with selected grapes from vineyards situated on hills at an altitude between 200 m and 350 m above sea level, in the heart of Valpolicella. Fermentation and maceration of fresh grapes take place in October for about 10 days. After pressing, the wine rests until January/February in cement or steel tanks. It is then re-fermented on the Amarone pomace to gain additional body and complexity.
Aging: Matured in Slavonian oak barrels of 50 hl for 12 months, followed by further aging in the bottle for approximately 6 months.
Appearance: Intense ruby red, clear and almost opaque.
Bouquet: Intense, clean, and elegant, complex with aromas of fresh and jammed red fruits; after a few minutes of aeration, delicate spiced notes emerge.
Palate: Dry, soft, and enveloping, structured and well-balanced with a pleasant almond finish.
Alcohol: 13.5% Vol
Recommended Pairings: A prestigious red wine best paired with elaborate first courses, red meat dishes, game, cured meats, and medium- to long-aged cheeses.
