Description
Grapes: 30% Corvina, 35% Corvinone, 35% Rondinella
Yield per Hectare: 70 q/ha
Training System: Veronese Pergola, single or double depending on the area.
Production Area: Hills of Marano di Valpolicella (classic and historical zone)
Soil: Predominantly calcareous-Eocene type.
Vinification: Produced with selected grapes from vineyards located on hills at an altitude between 200m and 350m above sea level, in the heart of Valpolicella. The clusters are hand-picked and rigorously selected at the end of September. The traditional grape drying process then begins, lasting approximately 100 days until January, with a natural weight loss of 35–40%. Soft pressing follows, then fermentation at controlled temperature and maceration for about 30 days.
Aging: 60% of the wine is aged for 24 months in 50hl Slavonian oak casks; the remaining 40% in medium-toast Allier oak barriques for 18 months. Further bottle aging for 6 months.
Appearance: Deep ruby red with garnet reflections.
Bouquet: Complex and intense, with aromas of ripe red fruit, cherry, almond, and vanilla; after a few minutes of aeration, tertiary and evolved notes such as tobacco, black pepper, cinnamon, and other spices can be perceived.
Palate: Dry and powerful, full-bodied, warm, and structured, with a very balanced and persistent finish.
Alcohol: 15% Vol
Recommended Pairings: An aristocratic red wine to pair with elaborate red meat dishes such as braised meats and roasts, game, stews, and aged cheeses. Excellent as a meditation wine.
