Production Area: Eastern hills of Conegliano, Vittorio Veneto, and neighboring municipalities (Treviso)
Soil: Silty, clayey, dry, poor and shallow
Vinification: Gentle pressing of grapes with destemming. Primary fermentation in temperature-controlled tanks (17–18°C) with selected yeasts. Slow secondary fermentation at low temperature for at least 45 days (Martinotti-Charmat Method).
Appearance: Light straw yellow with slight greenish reflections, crystalline, abundant foam with excellent persistence; very fine and long-lasting perlage.
Bouquet: Delicate yet intense, with fruity aromas of green apple, pear, and peach, accompanied by white flower notes, particularly acacia blossoms.
Palate: Light-bodied and gentle, soft yet with lively acidity providing pleasant freshness. The very fine, persistent perlage caresses the palate, releasing all aromas and enhancing the flavor.
Alcohol: 11% Vol
Sugar: 14 g/L
Acidity: 6.0–6.5 g/L
Recommended Pairings: Excellent as an aperitif and to start refined meals; its softness also pairs well with fish dishes. Ideal at the end of a meal with cream desserts or fruit tarts.
History: “Doxe” in Venetian dialect means Doge. Today, Prosecco reigns over this region as the premier sparkling wine, just as the 120 Venetian Doges once ruled. The 121° DOXE Prosecco symbolically carries the title of the 121st Doge, celebrating the Venetian Duchy that governed these lands for over a millennium, from the 6th century until 1797.
