122° DOXE – Conegliano Valdobbiadene Prosecco Superiore DOCG Brut

Production Area: Vineyards at 220–300 m a.s.l., west of Conegliano, in Farra, Pieve di Soligo, and Crevada
Soil: Predominantly clayey and calcareous
Vinification: Gentle pressing of grapes with destemming. Primary fermentation in temperature-controlled tanks (17–18°C) with selected yeasts. Slow secondary fermentation at low temperature for at least 45 days (Martinotti-Charmat Method).
Appearance: Light straw yellow with greenish reflections, crystalline, abundant foam with excellent persistence; very fine and long-lasting perlage.
Bouquet: Elegant and fruity, with notes of apple, pear, delicate floral hints, and minerality.
Palate: Gentle and elegant, good body, well-balanced acidity, dry and intense. Very fine and persistent perlage caresses the palate, releasing all aromas and enhancing the flavor.
Alcohol: 11% Vol
Sugar: 10 g/L
Acidity: 5.5 g/L
Recommended Pairings: Excellent with seafood dishes, especially raw fish; ideal with scampi and oysters.
History: “Doxe” in Venetian dialect means Doge. Today, Prosecco reigns over this region, just as the 120 Venetian Doges once ruled. The 122° DOXE Conegliano Valdobbiadene Prosecco Superiore DOCG symbolically carries the title of the 122nd Doge, celebrating the legacy of the Venetian Duchy that governed these lands for over a millennium, from the 6th century until 1797.
