Production Area: Lison-Pramaggiore (Province of Venice), Veneto
Soil: Flat, calcareous-dolomitic, clayey, and well-drained
Vinification: Gentle pressing of grapes with destemming. Primary fermentation in temperature-controlled tanks (15–16°C) with selected yeasts for 8–10 days. Slow secondary fermentation in bottle at low temperature (12–14°C) with at least 24 months on lees (Classic Method).
Appearance: Light straw yellow, crystalline, with soft foam and excellent persistence; very fine, long-lasting perlage.
Bouquet: Elegant and clean, with fruity notes and aromas of bread crust and yeast.
Palate: Structured and well-balanced acidity, dry. Very fine and persistent perlage gently caresses the palate, releasing all aromas and enhancing flavor.
Alcohol: 12.5% Vol
Sugar: 9 g/L
Acidity: 3.5 g/L
Recommended Pairings: Excellent with fish dishes, especially raw seafood like scampi and oysters. Pairs beautifully with beef tartare and more elaborated meat dishes.
History: The Matapan, also known as Grosso Matapan or Ducato d’Argento, was a coin minted around 1200 by the 41st Doge of Venice, Enrico Dandolo, to support the growing international trade of the Serenissima Republic.
