Cantabrian Anchovies
Cantabrian anchovies are much meatier and more flavorful, as the icy seawater in which they live causes them to constantly move and never stand still. After a period of maturation with soft pressing in salt, they are processed one by one, exclusively by expert women, who have passed this skill down from mother to daughter. Female hands are preferred to male ones, as they are smaller and more delicate.
The quality of these fillets is also determined by their size. The larger the fillets, the more careful the deboning can be. This meticulous process makes the processing more elaborate, making Cantabrian anchovies unique and different from our own.
Limited Edition (net weight 120g – drained weight 70g / 10 fillets)
These anchovies are a limited edition, as they are not always available on the market. Much depends on the anchovy fishing season in the Cantabrian Sea, which takes place exclusively in spring. June 21st is the last day of the characteristic fish auctions, attended by the main producers of the local canning industry. The larger the anchovies, the more valuable and therefore more expensive the product. Furthermore, compared to other anchovies, the limited edition triple zero anchovies have an intense flavor and exceptional aroma, due to a longer maturation period of at least 15 months. The longer curing process, under salt in wooden barrels, gives the fillets a brown color, unlike smaller, pinker fillets. The anchovies are stored in the refrigerator to ensure a lower salinity level than standard products. They must be kept between 5°C and 12°C and consumed within 3 days of opening.
