Description
Our Chorizo is a traditional Iberian cured sausage made from 100% Iberian pork and seasoned with paprika. Unlike typical salami, the pork is coarsely chopped rather than finely ground, and seasoned not only with salt but also with sweet paprika. It is the paprika that gives the chorizo its characteristic red color and distinctive flavor.
Like all quality cured meats, chorizo requires time to mature; however, its aging period is much shorter than that of ham, typically lasting 4 to 5 months.
