100% Ibérico Acorn-Fed Ham – Gold Label

Our 100% Ibérico Acorn-Fed Pata Negra Ham is the result of selecting the finest legs, forming a limited and numbered series according to the vintage.

Hind leg sourced from 100% purebred Ibérico pigs, carefully selected from birth and subjected to a traditional curing process.

They spend the first stage of their life on our farm, feeding on natural cereals produced in-house until reaching a weight between 40 and 50 kg, at which point they are moved to the dehesas.

Here, they enjoy an exceptional diet composed of these selected cereals, as well as pasture, tubers, roots, and acorns. By early October (the start of the montanera season), they weigh 90–100 kg and feed exclusively on acorns until reaching approximately 180 kg in adulthood.

This is essential to preserve the Ibérico breed and to qualify the ham as authentic acorn-fed Ibérico.

Thanks to their breed and extraordinary diet, these hams have a long, slender shank with golden, fluid fat on the outside, while the interior shows a rosy, melting texture that fills the palate with rich, lingering flavors.

Storage

Keep refrigerated at temperatures below 7°C.

With proper storage between 2 and 7°C, the ham can be preserved for up to 365 days. Its shelf life may be reduced if stored in a cool, dry place.
