Bernardo Selección Whole Ibérico Ham Leg

The Bernardo Selección whole Ibérico ham leg is an outstanding expression of quality and tradition.

Each piece comes from Ibérico pigs carefully selected from birth and raised in our own facilities, where they enjoy a diet based on natural cereals, pasture, tubers, and roots.

This meticulous care, from farm to table, ensures a final product of unmatched quality.

The whole leg preserves all the characteristics appreciated by true ham connoisseurs: a slender, elongated shank, covered by a layer of golden, fluid fat that protects a rosy-colored meat with a soft, melting texture.

The curing process, which lasts between 36 and 40 months, takes place in a controlled environment, guaranteeing an intensely rich flavor and a perfectly balanced texture.


Bernardo Selección Ibérico Ham – Hind Leg

Hind leg from pigs belonging to the BEHER farm, selected from birth and raised free-range.

These pigs are fed on natural cereals, as well as pasture, tubers, roots, and other natural resources from the exceptional ecosystem of our estates.

Once they reach the ideal weight, they exceed the time limits required by Ibérico regulations for slaughter; for this reason, they do not carry the official seal.

Due to their breed characteristics, these pieces feature a long, slender shank with golden, fluid fat on the outside, while the inside shows a rosy, melting appearance that fills the mouth with intense and lingering nuances.

Bernardo Selección Ibérico hams are cured in natural cellars and selected one by one, seeking uniform curing throughout the entire ham and requiring a curing period long enough to guarantee their exquisite quality.

Their darker external color makes these pieces an elegant and unique product.
